Peanut butter energy bites
These little energy bites are jam-packed full of fibre and have mood-boosting properties from the oats. With just four whole-food ingredients (five if you want to include choc chips - and you probably do!), these raw balls are super quick and easy to whip up for a snack.
Ingredients
(Makes around 20 balls)
2 cups oats
1/2 cup ground flaxseed (you can also use ground LSA)
1 cup nut butter such as peanut or almond butter
1/2 cup raw honey
1/2 cup dark chocolate chips (optional)
Method
Add all ingredients to a food processor except for the chocolate chips and pulse until the mixture is combined and sticking together.
Stir in chocolate chips by hand, if using.
Use a tablespoon to roll mixture into smooth balls and place on a parchment-lined baking sheet. This should make around 2o bites.
Place in the refrigerator if you prefer these firm, although you can also eat them straight away! These can be stored in the fridge for up to 2 weeks.
